Menu Plan Monday


I mentioned in my last Menu Plan Monday post (two weeks ago) that I love menu planning but I struggle with it, which is why I didn't have a Menu Plan Monday post last week. This week I'm going to try and keep things simple, meaning using things I already have instead of having to buy food.

Monday: Thyme Roasted Chicken w/ roast potatoes and carrots

Tuesday: Hot Dogs w/ Frozen Fries and cole slaw

Wednesday: Turkey Burgers w/ carrot sticks and side salad

Thursday: Turkey Meatball subs w/ frozen veggies

Friday: Brinner

Menu Plan Monday

I find menu planning to be very helpful, but I also find it hard to get my act together and actually plan the menu. Since I'm off for the summer, I'm hoping to find some easy and healthy dinners my family will eat.

Monday: Melt-in-Your-Mouth baked chicken with steamed broccoli

Tuesday: Tball game night - Frozen chicken nuggets and fries

Wednesday: Maple Mustard Salmon with corn on the cob

Thursday: Crockpot Mac & Cheese with a frozen veggie

Friday: Brinner (breakfast for dinner) - scrambled eggs, pancakes, chicken sausage

Monthly Menu Planning

I am one of those people that feel menu planning in very difficult. I never seem to get my act together to plan a week worth of meals. Every now and then I have a organized week where I do manage to plan, and stick to, a menu plan. On those weeks I find menu planning does save time and money. No more ordering a pizza because at 5:45 in the evening no one knows whats for dinner. Another thing I've learned about menu planning on a budget is even more difficult. I may really want to make a pot roast one week, but not a single local grocery store (I have 5) has pot roast on sale. So what do I do? I have a list of 20 cheap, easy things I know my family will eat. This is what they are:

(When I say "veggie" I use whatever was on sale that week, if there were no good sales, then I make whatever frozen veggies we have):
1) Brinner (breakfast for dinner) scrambled eggs, toast, whatever fresh fruit was on sale
2) Pasta in tomato sauce, garlic bread, veggie
3) Homemade pizza and fries(homemade or frozen)
4) Boxed mac & Cheese, veggie
5) Frozen chicken nuggets, veggie
6) Pork chops, couscous, veggie
7) Baked Chicken, cheesy risotto, veggie
8) BBQ chicken, fries
9) Cream cheese & chicken crescents, veggie
10) Lasagna, garlic bread, veggie
11) Grilled cheese w/ tomato soup
12) Chicken tenders, veggie
13) Baked fish, mashed potatoes, veggie
14) Homemade mac & cheese, veggie
15) Chicken quesadillas, rice, veggie
16) Stuffed zucchini, couscous
17) Goat cheese stuffed turkey burgers, veggie <-------only make this when goat cheese and ground turkey go on sale!
18) Philly cheese steak subs, fries
19) Herb rub chicken, also toss carrots & chopped potatoes in pan for a no fuss meal
20) Homemade beef stew <-----made in winter when stew meat goes on sale, I stock up and freeze extra beef stew

I have most the ingredients in my pantry, so that helps as well. Every week I usually pick five items off the above list and think of two other things I'd like to make that has most of the ingredients needed on sale. Using this method has made menu planning super easy!

Menu Plan Monday

Yeah, I actually don't have a plan. Menu planing has always sounded like a good idea, I've just never been able to get my act together to plan a menu out and STICK TO IT! Hopefully someday I will, but right now I have so many other goals I'm trying to achieve, I don't want to overwhelm myself with any more.

But one of my fave blogs, I'm an Organizing Junkie , has a menu plan posted. Also hundreds of bloggers have linked up to her blog with their menu plans. If you're like me and have trouble planning your own menu, this is the best place to find ideas. Especially when it's 4:30 pm and you haven't given one thought as to what's for dinner.

  • Monday: Homemade Sloppy Joe's
  • Tuesday: Swedish Meatballs w/ steamed broccoli
  • Wednesday: Pork loin, mashed potatoes, dinner rolls
  • Thursday: Baked Chicken Dijon
  • Friday: Chicken Mannicotti w/ green beans
  • Saturday: Sesame Noddles & Veggies
  • Sunday: Tacos w/ rice

menu plan monday

A few of these things are meals I assembled the other week. I'm working 4 out of 5 nights this week, so I was trying to think of easy things for daddy & grandma to make.


  • Monday: Manicotti w/ garlic bread
  • Tuesday: French Bread Pizza
  • Wednesday: Lemon Chicken & rice
  • Thursday: Mac & Cheese
  • Friday: Meatloaf w/ mashed potatoes

Cooking/Baking Day!

Today I plan to spend most of my day baking, cooking, and assembling different foods. Most of which are dinners I will freeze. My list is as followed:

Baking:
  • Chocolate cherries
  • Granola bars

Cooking/Assembling (all of this will be put in the freezer)

  • Chicken Packets
  • Lemon Chicken
  • Chinese Chicken Morsels
  • French Bread Pizza
  • Chicken Nuggets
  • Manicotti

There is a really good deal on chicken this week. I'm really hoping by having plenty of meals stored in my freezer, we'll be able to have a good dinner every night of the week. When I didn't have time to make a menu, we ended up having PB & J 3 nights last week. Not something I'm proud of. This is my way of trying to find an easy solution for last minute dinners for meal challenged moms, such as myself. Well, off to the store!

Menu Plan Monday

This week I'm really trying to use up what I have in my kitchen already. I don't want things to start going bad, and the sales this week aren't the greatest.
  • Monday: Tacos
  • Tuesday: Pulled Chicken Sandwiches
  • Wednesday: Mac & Cheese w/ hot dogs
  • Thursday: Leftovers
  • Friday: Cheeseburgers & homemade fries

It will be a simple week of cooking in my home :)

Menu Plan Monday

I've bumped it up to 5 days this week, instead of 4. I hope I can do it! The meals I picked this week sound very yummy and I can't wait to try them.

Monday: BBQ steak strips w/ corn on the cob
Tuesday: Applesauce Chicken w/ green beans
Wednesday: Herb rubbed pork chops w/ steamed carrots
Thursday: Sweet & Sour Casserole
Friday: Brown Sugar Chicken w/ rice & sugar snap peas

Update

I've talked a bit about my New Year's Resolutions (if you're interested in what they are, check out this post .) I have been struggling a bit, but I knew my goals wouldn't be easy. It seems when I do good on one goal, a different one suffers.I'm not letting it bother me, because I know they're all a work in progress.

My biggest struggle has been menu planning! Go figure. That seems to sound like my easiest goal, but it's turned out to be my hardest. I'm taking small steps and planned half a menu this week:
  • Mon: Pork chops and potatoes
  • Tues: Chicken quesadillas (cooked in the crockpot), w/rice and mexicorn(from a can)
  • Wed: Pulled pork sandwiches (also cooked in the crockpot)
  • Thurs: Pita pizzas w/ homemade fries

Tonight's dinner was delicious. Last night we ended up eating mac & cheese from a box, because I took the pork out of the freezer and noticed it wasn't wrapped properly. When it defrosted, it was covered in odd brown spots and had a funky smell.

I hope I can pull off Wed. and Thurs dinners. If I do, that would be the most planned dinners I have ever had in one week!

Menu Planning Help from Oprah

Did anyone catch Oprah's show on Wednesday? If you didn't, than you missed a great show filled with easy and budget friendly meals. Chefs Cat Cora, Curtis Stone, and Tyler Florence were all guests on the show offering their expertise on how to prepare a weeks worth of meals. A lot of them looked very yummy. I'm defiantly going to try to incorporate them into my menu planning, which I'm still working very hard on.

Working on it...

So far I haven't been doing well on my resolutions. I've eaten McDonald's twice-yuck! I finely sat down and made up a menu for the next week. I will try my hardest to stick with it. Oh, did I happen to mention that my food budget for the month is only $230. Yes, I will feed a family of 4, as healthy as possible, on no more than $230 in a one month period. Here is the menu for this week.

WEEK 1:
Sunday
Breakfast: Pancakes & sausage
Snack: 2 gram crackers, small yogurt
Lunch: Chicken salad sandwich on wheat, red pepper slices
Snack: small sweet from Christmas
Dinner: Tofu stir fry

Monday
Breakfast: Frozen blueberry waffle, yogurt
Snack: Pria bar
Lunch: Ham & cheese on wheat, apple
Snack: a few wheat thins w/ sliced cheese
Dinner: Baked salmon, mashed potatoes, summer squash

Tuesday
Breakfast: Wheat toast, Clementine
Snack: Fruit cup
Lunch: Leftovers
Snack: 2 cookies
Dinner: Steak, sweet corn, rice pilaf

Wednesday
Breakfast: Cold Cereal, yogurt
Snack: Peach cup
Lunch: Turkey sandwich on wheat, Clementine
Snack: Almonds
Dinner: Sloppy Joe's made from scratch w/ homemade potato salad

Thursday
Breakfast: Wheat toast, banana
Snack: apple w/ peanut butter
Lunch: Salad, yogurt
Snack: small bowl of sherbet
Dinner: Cheeseburger pie w/ green beans

Friday
Breakfast: Bagel w/ low fat cream cheese, banana
Snack: muffin
Lunch: Ham & cheese on wheat, baked potato chips
Snack: cucumbers & dip
Dinner: Homemade veggie pizza w/ homemade sweet potato fries

Saturday
Breakfast: Scrambled eggs, turkey bacon
Snack: yogurt w/ homemade granola
Lunch: Chicken cutlet sandwich, carrot sticks w/ low fat dip
Snack: brownie
Dinner: Leftovers
